Lemon Cheese Golden Chicken

Ho Ho Ho.... Christmas day is almost a month from now. I believe most of the people have start their preparation to welcome this special day.

Today, I will introduce you a chicken recipe for your Christmas dinner and party preparation, which I like to prepare for my family and friend. I named it as Lemon Cheese Golden Chicken. Serve the dish with a glass of wine, will make the dinner to be more tasty and wonderful, especially in this Christmas day.

Ingredients:
1. 2 pieces whole chicken breast, skinned, boned, and split it into two.
2. 125g of grated cheddar cheese
3. 4 large thin of slices ham
4. 150g of flour (plain flour seasoned with salt and pepper).
5. 2 beaten of eggs.
6. 125g of breadcrumbs,
7. Cooking oil

Compliments:
a) Onion and tomato salsa
1. 2 tbsp of sweet chili sauce
2. 4 tbsp of lime juice
3. 1 piece of small tomato, seeded and chopped
4. 1 piece of big onion, chopped
5. 2 pieces of black olive, sliced
6. 1 tsp of salt

b) Lemon Sauce
1. Lemon rind
2. 2 tbsp of lemon juice
3. 1/2 cup of water
4. Sugar to taste
5. 1/2 tbsp of custard powder for thickening

Method:
1. Slice each piece of chicken breast open to form cavity
2. Stuff with cheese and reshape meat with hand. Wrap in slice of ham
3. Carefully dredge the chicken breast in the flour and then dip in beaten egg. After that, thoroughly coat with breadcrumb.
4. Heat the cooking oil and deep fry the chicken breast from 3) until it become a golden brown in color.
5. To prepare the salsa: combine all the compliment (a) in a small bowl and mix well
6. To prepare lemon sauce: Put all the sauce from compliment (b) except the custard thickening into a pot, and boil it. When the sauce boils, thicken with custard thickening.
7. Serve the chicken breast from method (4) with the salsa from method (5) and lemon sauce from method (6).
